Ingredients
  

  • 2 medium zucchinis, spiralized
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup heavy cream or coconut cream for dairy-free
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste
  • fresh basil optional, for garnish

Instructions
 

  • Spiralize the zucchinis and set aside.
  • Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute.
  • Stir in the cream and bring to a light simmer.
  • Add parmesan and stir until smooth and slightly thickened.
  • Toss in the zucchini noodles and cook for 2–3 minutes until just tender.
  • Season with salt and pepper, then garnish with basil before serving.

Notes

Do not overcook the zucchini noodles to avoid a mushy texture. For a dairy-free version, use coconut cream and a dairy-free cheese alternative.
